Controlled Environments & Heritage Materials
Aging cheese (affinage) is a subtle combination of science, environment, and patience. When we set out to build our showroom in Kuala Lumpur, our primary challenge was to replicate the cool, humid microclimate found in natural European caves.
By designing a deep-insulated limestone vault, lining it with sustainable spruce boards, and importing stone-ground salt blocks to regulate microflora, we successfully created the exact parameters needed to age hard, soft, and blue cheeses.
Our Spruce Plank Method
Spruce boards act as natural humidity regulators. They absorb moisture when fresh cheeses are laid down, and gradually release it back into the cellar atmosphere, maintaining a constant state of equilibrium essential for rind respiration.
Commitment to Sourcing Integrity
We select only organic, raw milk cheeses from certified grass-fed farms that practice ethical animal husbandry.
AOP European Sourcing
We work directly with traditional cooperatives in France, Switzerland, and Italy, importing wheels with Appellation d'Origine Protégée (AOP) credentials that guarantee regional authenticity.
Local Highland Farms
We support local dairy farms in the Cameron Highlands, sourcing grass-fed organic goat's milk to craft seasonal fresh cheeses in our Kuala Lumpur boutique.
Traceable Supply Chains
Every wheel of cheese entering our cellar is traceable to the specific farm, dairy breed, and milking date, ensuring complete transparency for our patrons.
